Crispy Tahini Chocolate Cups

Crispy Tahini Chocolate Cups are made with creamy sesame tahini, crispy organic brown rice cereal, and delicious dark chocolate.  Perfect as homemade Christmas gifts to give to others or leave as a treat for Santa with milk instead of cookies!

Crispy Tahini Chocolate CupsChristmas is this weekend...whaaaaatttt???  Where the heck did the year go?  For reals, I'm over here still grieving over the end of summer and I'm not ready for Christmas.  Not. Ready. At. All.

The only thing I am ready for are these Crispy Tahini Chocolate Cups.  Super easy to make,  delicious, chocolatey cups filled with organic brown rice cereal and earthy tahini.

I ate a ton of them over the weekend.  See Santa in the pic below?  He's eyeing those babies and hoping he finds a big plate of these on Christmas Eve, instead of more sugar cookies.

Crispy Tahini Chocolate CupsNot that Santa doesn't like sugar cookies.  I left him some Grinch Heart Sugar Cookies last year and I made out like a bandit!   This year, I wanted to switch it up a little and leave him some chocolate.

I didn't use just any chocolate, but a somewhat "healthier" chocolate and my FAVORITE baking chocolate of all time Enjoy Life Dark Chocolate Chips.  This chocolate is awesome because it's:

  • all natural
  • vegan
  • gluten free
  • Paleo

PLUS it's some of the best tasting, reasonably priced chocolate around.  I adore this chocolate almost as much as I adore my husband.  Yeah, it's that good.

What is Tahini?

Tahini is a paste made from lightly toasted ground hulled sesame seeds.  It is used a condiment and can also be found in a variety of Mediterranean and Middle Eastern recipes.  Loaded with healthy omega-3 and omega-6 fatty acids, tahini can easily found on grocery store shelves in the ethnic food section or online.

How to make Tahini

Or you can make your own right at home!  Just buy hulled sesame seeds (they will be a very light color) and toast him for a few secs in a dry pan.  Let cool, then add them to a food processor to finely grind up while adding a neutral oil (vegetable, canola, etc) until it turns into a smooth paste.  That's all it takes and now you have homemade tahini!  Yay you!!!

Ingredients

  • 1 ½ cups all-natural dark chocolate chips or your favorite type (I use Enjoy Life chocolate chips)
  • 1 ½ teaspoons vanilla extract
  • 1 ½ cups organic crispy brown rice cereal
  • ⅓ cup organic Tahini (sesame paste)
US Customary - Metric

Instructions

  • Place chocolate chips in a large bowl and melt over a double boiler or in the microwave. Once melted, add the vanilla extract. Set aside.
  • In medium bowl, mix together the brown rice cereal and the tahini. Add this mixture to the chocolate and mix well.
  • Take out a mini muffin pan and line with mini baking cup liners. Fill each muffin liner cup with the crispy tahini chocolate mixture, then place in refrigerator to quickly firm up (about 5 minutes). Remove the cups from the pan and place in a covered container. Repeat process with remaining mixture.

Store chocolate cups in a cool, dark place or in the refrigerator for up to 3 weeks.

    These look delicious! They also look like a great alternative to all the sugary cookies I've been baking up.

    I feel you on the year going by way too fast. Wasn't it just summer?? I think one of my New Year resolutions is going to be to slow down and enjoy each season. I've been so busy this year, I feel like the year got away from me.

    I have no idea where the time went either! I think I could waste a lot of time sitting on my couch in my jammies eating these delicious chocolate cups! I don't think I've ever had tahini in a dessert before, but it sounds delish and I love crispy chocolate! Santa will be happy with these!

    If I have to share these with Santa, then I'd better make extra!! I want a gift from him, ya know, so I better be behaving, lol And it is SO close that I can hardly believe it! I've never had anything like this before, but sounds delicious! I just love the flavour of sesame seeds on stir fry and I bet that earthy flavour from the sesame paste really adds a lot to these cups! Plus, you have the rice cereal in there, which I love. I always went for the chocolate Easter bunnies with the rice in there, eating the ears off first, of course.....hehehe. And thanks for the tip for the homemade tahini. WOO HOO for homemade! Pinned!     For some reason I can't open the video, but the photos look amazing! I've actually picked up some of those mini cupcake liners last week, and I can't wait to make some chocolate cups... Oh, and I don't really feel like 2017 is around the corner! Do you?

    I have zero freggin' clue where the heck the year went. I swear Thanksgiving was just last week. And the summer? Yeah that was 2 weeks ago, right?! While I am enjoying the holiday season, I'm slightly frightened it will be 2017 in about .2334459 seconds. Like whoa. Anyways, these cups are AMAZING!!!! I love love looove the tahini in here!!
