FOR THE STEAK: 2 pounds beef top sirloin steak, cut into large cubes salt and pepper to taste FOR THE CHIMICHURRI SAUCE: 1/2 cup olive oil 1/4 cup red wine vinegar 1/3 cup finely chopped flat leafed parsley 1/3 cup finely chopped cilantro 4 garlic cloves, mashed and finely minced 1/2 whole fresh lime, juiced 1 tablespoon fresh or jarred jalapeno, minced 1 teaspoon kosher salt additional accompaniments: baked yuca fries FOR THE CHIMICHURRI SAUCE: Combine all in a small bowl, cover and let sit at room temperature for at least 2 hours to allow flavors to develop.
Serve the steak kabobs immediately with the chimichurri sauce.
