Blanch green beans by putting large pot of water over high heat and bring to a boil. Wash green beans, remove ends and strings. Leave beans whole and add to boiling water. Cook for about 3-4 minutes or when green beans turn bright green . Drain and place in a bowl of ice water to stop the cooking process. Drain and set aside.
In large skillet, heat butter and olive oil over medium heat. Add shallots and sauté 2-3 minutes. Add green beans and fresh ginger. Sauté for 5 minutes, or until green beans are tender crisp. Season with salt and pepper to taste.
